Brain-Friendly Banana Pancakes

My family used to make "whale-belly-breakfasts" (WBBs) every Sunday with pancakes, waffles, eggs, bacon - you name it, we made it. When my concussion & resulting brain-food focus happened, it was difficult for me to partake in these family breakfasts. To me, it was just another thing I couldn't participate in. UNTIL...I realized there are so many yummy ways to make these foods in a way that is good for your brain AND good for your tastebuds/FOMO levels.
This is where banana pancakes come in. These puppies are so easy to make and versatile. I mix the ingredients all together to make a batter, throw some blueberries and walnuts in them if I feel like it, and enjoy! 🥞🫐
I also love making a blueberry sauce to go with it (not pictured) - I simply put some blueberries and water in a saucepan, add some chia seeds and vanilla extract, and wait until it thickens. This is a healthy alternative to maple syrup (although I personally dribble some on anyways because I love it too much). Added bonus - walnuts, blueberries, chia seeds, cinnamon are all highlighted brain foods!
