Peanut Butter, Banana, Blackberry Jam

Today's feature for Lunches in Lockdown is one of my FAVORITES - a peanut butter, banana, & homemade blackberry chia jam sandwich.

Throughout the past five years, I have been put on a handful of different diets from different doctors - all of them contradicting one another. Eat eggs, don't eat eggs, avocados are the best thing for your brain, avocados are the worst thing for your brain, avoid gluten, avoid lactose, avoid sugar, the list is endless. Finally, I decided that I was going to listen to what felt good for ME. 🏻

Bread is one of those things. The truth is, I MISS SANDWICHES! So, I've explored GF options. I am careful with gluten-free breads (a lot of them have additives), but have found the best luck either at farmers' markets (they have GREAT GF options) and options like Canyon Bakehouse. Gluten-free sourdough is one of my all-times :)

NOTE#1: To make the jam, I put blackberries in a saucepan with 4-5tbsp of water, bring to a boil, and then simmer for ~5 minutes (stirring often) until soft! Then, I add a touch of vanilla extract, 2-3tbsp chia seeds, and stir on low for 5 more minutes until jam has thickened. Voila! Ready to layer on my sandwich with sliced banana & PB. 🥪

NOTE#2: I always check the ingredients on my PB jars - the sole ingredient should be peanuts (no added sugars - they'll trick ya with the brand name 'Natural'!). Also, leftover jam is DELICIOUS on banana pancakes. 🥜
