Tuna & Veggie Salad with Balsamic Drizzle

Today's feature for Lunches in Lockdown is a tuna-veggie salad with balsamic & EVOO drizzle.


MESSAGE FROM THE CHEF

Tuna has some highly sought-after OMEGA 3s that our brains could always use more of, and is a great to switch it up. I usually make this whenever I have some yummy roasted broccoli left over so I have to do minimal effort to throw this puppy together! 🥗

NOTES: I personally love to use Wild Planet's Wild Albacore Tuna (no salt added, pole & line caught!) and mix it with a spoonful of Primal Kitchen's mayo (made with avocado oil). As for the egg - soft-boiled turns out best for me when I 1) boil the water first, 2) throw egg in with boiling water for 5-6 minutes, 3) put egg in ice bowl and peel away!!
