Cinnamon Sweet Potato Hash

First, I roast the cubed sweet potatoes (with cinnamon, salt, pepper & EVOO) at 400 in the oven until starting to brown. I then throw the cauliflower rice in a pan and saute on the stove, stirring often. Once done, I finish with saute-ing some fresh kale with EVOO on the stove until it is crispy. THEN, mix everything together in a bowl and you've got your side! I usually pair this with chicken, pork, or steak - but feel free to do whatever you’d like with it!
