White Bean & Ham Soup

I love this recipe and wanted to share it with Easter on the horizon! My family loves to cook a giant ham for Easter dinner - and each year, we bargain over which soup we will make with our leftover ham bone. Split pea and white bean are usually neck-in-neck...but this one is my personal favorite :) No additives, veggie-heavy, and the white beans are a great source of fiber and protein.
Easy recipe to follow! Toss the ham bone into water with a little ham still attached, and let simmer for a while to let the ham get soft. Then add in all other ingredients and keep on simmer, stirring until thickening.
Quick sidenote: As we’ve just passed the year mark of COVID’s beginning, I’m feeling grateful for the extra time spent with family, cooking meals and getting through this quarantine / crazy times all together. While many things became harder as life slowed, I am also really feeling grateful for the time I got to focus more on my brain and recovery. I hope you all have some silver linings as well from this time ️.
