Thursday Night Tacos

Healthy and delicious meals to make at home! As we move slowly back to the restaurant world, I hope we don't lose the built-in family and friends time we have found to cook meals together - and I want to share some of the highlight meals that brightened up our quarantine Thursdays. ️
THURSDAY NIGHT TACO SPREAD:
I love, love, love fish tacos because they are incredibly easy to use healthy substitutions without sacrificing any flavor. Here are my go-to substitutions: @Sietefoods has finally answered my prayer for delicious gluten-free (and minimal ingredient) tortillas. Their lime tortilla chips are also INCREDIBLE. And @Kitehill makes a mean almond/coconut based sour cream option that adds some very much needed texture.
🥑 Everything else is homemade! My guacamole = avocados, cilantro, tomato, onion, fresh lime juice, garlic, salt & pepper. I also like to sauté red/yellow/green peppers and onions for another topping. For the fish - I usually grill cod, but if you don't have a grill, oven works just great! And lastly, saute some swiss chard, open a can of organic black beans, and go build your brain-friendly tacos!!!!
FOR OTHER FAMILY MEMBERS:
For the family members that do not wish to do GF, I also have a batch of hard-shell tacos on hand, as well as cups of real shredded cheese and/or sour cream! We have one non-fish eater so I always make a little chicken taco for him just to cover all the bases.
