Buddha Bowls
Message from the chef
I like to set it up as a build-your-own-bowl, with different options for everyone. Since this requires making many different little dishes, I always recruit a friend or family member to split the tasks with me so I don't get overwhelmed! So - let me walk you through my own brain-friendly bowl choices :)
- Quinoa base. Black beans, sauteed kale, roasted sweet potatoes & caramelized onion, broccoli. Chicken sausage, sliced avocado. Possibly a fried egg. And voila! 🥑
NOTE: If you want to get creative, you can make a peanut sauce to top it with. For the peanut sauce, I usually mix: 1/2 cup peanut butter, 2 tbsp coconut aminos, 1 tbsp rice vinegar, 2 tbsp honey, 2 garlic cloves, 1/2 lime squeezed, 1 pinch chili powder, 1 tsp ground ginger, 2 tbsp water. ️
NOTE #2: The wine is for my friends in this photo :) I like to make a little mocktail so I don't feel too left out - usually a lemon spindrift with sliced lime and muddled strawberries!
